Actually, my real name is Heather (but you can call me Matilda!) We chose the name Matilda's Kitchen because we are originally from Australia and were inspired by the famous Australian folk song, Waltzing Matilda. In the late 1980's I developed a tumor in my jaw and consequently endured several operations which resulted in numerous infections. These infections were treated with large amounts of antibiotics that soon suppressed my immune system. I developed Chronic Fatigue Syndrome, severe food allergies and lethargy so severe that for the next ten years I was barely able to function. Many days I was not even able to get out of bed. It was during this time that I developed my recipe for Flax & Company, a mix of ground flax, nuts & seeds. I needed something that was high in protein, fiber, omega 3's, but was also gluten, wheat and sugar free. I also needed something that was tasty, healthy and versatile - something I could use on yogurts, cereal, pancakes, smoothies, and in baked goods. I had always been health conscious and for many years owned a health food store in Australia and managed one in Nashville, Tennessee. I knew that I was eating well but I was not getting enough high density nutrients so I began juicing! It is said that for every year of illness it will take a month of healing. With the help of prayer, 4-6 glasses of fresh vegetable juices daily, lots of water, barley grass and a host of other goodies including Flax & Company, my immune system gradually began to improve. In 1996, our family moved to Nashville, TN where I began home educating our youngest son. He wanted to learn about business so we started a small project with an initial investment of $100 each. The project was to make and market Flax & Company. At the health food store where I worked, many customers began purchasing our product, and after 7 years we have gained many loyal customers around the country. Because of my struggles with health and my awareness of the connection between nutrition and health, I now endeavor to develop products for people who want real food, food that can help promote and maintain good health.
